Apricot-Date Loaf

3 eggs
1 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
pinch salt
3/4 cup dark brown sugar
2 cup whole pitted dates (8 oz.)
1 package whole dried apricots (8-10oz.)
2 cup whole walnuts

In a small bowl, beat eggs until foamy and add vanilla. In a large bowl, combine flour, baking soda, baking powder, salt and brown sugar. Add dates, apricots and walnuts, being sure to coat dried fruit and nuts well with dry ingredients. Add beaten egg mixture. Mix well; dough will be very stiff. Press firmly into a long loaf pan (12-3/4") greased and floured. Bake in preheated 325° oven for one hour. Makes one loaf.
