Migas

Migas is Spanish for "crumbs" because you crumble tortilla chips into eggs.
4 eggs
1 tablespoon milk
1 tablespoon butter or margarine
1/3 to 1/2 cup grated cheddar or Monterey jack cheese
2 tablespoons chopped green chilies
1/2 cup tortilla chips
2-3 drops of Tabasco pepper sauce (optional)
picante sauce (optional)
salt and pepper to taste
In a small bowl, beat together the eggs, milk, Tabasco, salt, and pepper. Melt butter or margarine in a skillet over medium heat. Cook the eggs, stirring occasionally, until they are almost set. Add grated cheese and chilies, stir, and then quickly crumble the tortilla chips over eggs and stir them in just as they are setting. Serve alone or with picante sauce. Makes two servings.
